Culinary Intelligence

Peter Kaminsky, food critic and author has recently published his book on satisfying an appetite by eating foods with maximum flavor.  Read article  He focuses on ingredients that pack a lot of flavor - F.P.C., or flavor per calories, so that small portions will satisfy.  We are moving away from large portions, but it is more so than eating less of the same food.  In fact, the pleasures that comes from eating are enhanced if we think before we eat, choose the right ingredients, and understand how flavors work together.  This is the essence of our philosophy, and the inspiration for the first line of cookies.
